Apricot and ginger energy bites
Energy Bites 

Try our delicious energy bites as a great mid afternoon snack to push through the day!

Ingredients: 

  • 200g mixed nuts ?
  • 75g dried soft apricots
  • 15g fresh ginger
  • 30g pea protein powder
  • 40g 85% dark chocolate ?

Blend the mixed nuts in a food processor for a minute or so, until they resemble a flour like consistency.

Add the dried apricots and fresh ginger and blend for another 30-45 seconds. Add the pea protein powder and blend for a further 30 seconds. The mixture should be quite sticky. If not add a few more apricots.

Place the mixture into a bowl and with your hands start making them into balls. Once you have created 9 equal size balls place to one side. Crack the dark chocolate into small pieces in a bowl and melt in a microwave for around 60-90 seconds.

Keep stopping the microwave to give the chocolate a stir to stop it from burning. Once the chocolate is melted, grab an energy ball and dip it in! Make sure you cover it all. Place on a plate with some greaseproof paper and pop in the fridge for 20 minutes!!
