Try this protein packed breakfast recipe for a healthy, balanced breakfast that will keep you fuelled for hours.
Ingredients:
- Cherry tomatoes
- Lemon juice
- Virgin olive oil
- Sprigs of basil
- Cannellini beans
- Fennel seeds
- Large egg
- Rye bread
- Ricotta cheese
- Balsamic glaze
Directions
Chop the tomatoes in half, place in a bowl and toss with the freshly squeezed lemon juice, extra virgin olive oil and a pinch of sea salt.
Tear and add the basil leaves. Fry the drained beans, fennel seeds and a little cracked black pepper in a non-stick pan for 5 minutes. Add the tomatoes into the pan with 100ml of boiling water and let bubble for another minute. Crack the egg(s) on top of everything in the pan and then place the lid on or some tin foil.
Reduce to a medium to low heat and cook for another 3-4 minutes. Once everything is cooked, drizzle the balsamic glaze over. If your calories allow, then toast the rye bread and smear over the ricotta.
